Google can only recommend a restaurant once enough people have already been. These forty clear 4.7, cost real money, and have almost no reviews at all.
Google ranks restaurants by confidence, and confidence is mostly just volume. A 5.0 from nine diners is noise; a 4.6 from nine thousand is a fact. Nothing can tell those two apart except waiting for more people to turn up, which means the first page of results is always, structurally, a report on where Bali ate last year.
This guide holds 702 restaurants and 330 of them carry more than a thousand reviews. Those are the ones you will be shown. This is the other end of the same data: 4.7 and above, under three hundred reviews, and — the part that separates it from the warung list — a price band topping out above Rp 150,000. Cheap and brilliant is a different piece. This is the one where somebody is buying proper produce and cooking on purpose, and almost nobody has been.
For the avoidance of doubt: no chef told me any of this. It is a rule over the data rather than a set of interviews. It is also the rule that would find their answers, because a cook's night off is the one meal that is not chosen off a first page.
All forty have 6,227 Google reviews between them. One restaurant in Kuta has 25,315 on its own. That gap is the whole argument for the list and also the warning attached to it — at these numbers a rating moves half a star in a month, and some of these will have closed. That is the deal. Twenty of the forty sit in the stretch from Canggu through Pererenan to Cemagi, which is where the people who cook here actually live. Go before the review count catches up.
